Cooking time 1 hour, Oven 190 C/375F/Gas mark 5 INGREDIENTS 200g self-raising flour Pinch of salt 1/2 teaspoon ground mixed spice 75g margarine 100g demarara sugar 100g raisins 100g sultanas 50g chopped mixed peel 50g glace cherries, chopped 1 egg, beaten 125 ml milk METHOD Grease and 18cm (7 inch) cake tin and line with greaseproof paper. Sieve together flour, mixed spice and salt and rub in the margarine. Add the sugar Add all the chopped fruit and combine. Add the egg and enough milk to allow the mixture to drop from a spoon when given a sharp jerk. Spoon mixture into the prepared tin and bake for on hour until the cake is golden and a skewer inserted in the centre comes out clean. Leave in the tin for 10 minutes, then turn onto a cooling rack. |
